麥盧卡蜂蜜酒以麥盧卡蜂蜜為原材料，經自 然發酵，陳釀後製成的低濃度酒精飲品。它 的味道濃郁醇厚，質滑芳甘，入口清爽。
而好的蜂蜜酒仰賴的卻是釀酒師對於酵母 和蜂蜜的完美比例。我們蜂蜜酒的故事， 便是如此圍繞著養蜂人和釀酒師共同攜手 促成的成果。
將蜂蜜與水混合併加入酵母製成麥芽汁，蜂蜜中的天然糖分便會發酵為酒精，並達到干澀的口感。再次加入麥盧卡蜂蜜，並將其轉化為殘留的糖分與酒 再次混合。為了獲得更好的完製品，我們將於後期加入膨潤土以保存酒內的蛋白質，並放置四周使其更穩定。 利用麥盧卡蜂蜜代替糖為發酵劑，那每一口 濃郁的蜂蜜口味，使我們的蜂蜜酒擁有獨特 的口感及與眾不同的魅力。採用先進的釀酒設備，完美的混合及注入所 需的材料，以製成新西蘭金箔白蘭地麥盧卡 蜂蜜酒。

Our Honey Wine is made by fermenting New Zealand Mānuka Honey, which releases a distinctive rich honey flavour carried through on the palate, filling the mouth with a refreshing clean finish.
A wort is made from the honey and water with yeast added, and it ferments to dryness by converting the natural sugars in the Honey into Alcohol. Residual sweetness is blended back into the wine by adding Mānuka Honey and it is protein stabilised by adding bentonite. Wine is left on bentonite for 4 weeks to clarify and for the bentonite lees to compact for better yield. Once honey is been harvested, matching the appropriate yeast culture to the honey is key to developing the desired taste and mouth feel of mead. Our winemaking story was then based around the synergy of the beekeeper and the winemaker.
Kiwi Manuka, Manuka Honey Wine – The Nose has distinctive full yet delicate Honey and Citrus Aromas. In the mouth there is a smooth rounded body to the wine with intense Unique Manuka flavours dominating the palate upfront, leading to a clean balanced finish where the acidity compliments the sweet honey aftertaste.
Used as a fermenting agent instead of sugar, the honey imparts a distinctive character and texture, with the initial impressions dominated by concentrated honey flavours. The wine broadens out on the palate and becomes a rich and fulfilling experience, the finish refreshingly clean, with natural acidity balancing the smooth honey aftertaste. Serve with good quality crackers and an assortment of cheeses; blue cheese matches our Manuka Honey Wine superbly!
